Mount Gay, the oldest rum house in the world, created Black Barrel: the latest creation of Master Blender Allen Smith; a mixture of small batches that have been handcrafted. A blend is created which is the combination of two distillates: one aged that was made in a discontinuous copper pot-still and another also aged in copper columns. But it doesn't stop there, there is another process called "finishing" and which gives rise to the name Black Barrel. In this, the blend resulting from the previous process is aged a second time in charred oak barrels that contained bourbon.
