Distillation in Alquitaras at 65º to obtain excellent hollows. The extraordinary characteristics of this Brandy are the result of the meticulous selection of the raw material with which it is made. The selection of excellent white palomino and airen wines begins, an early distillation and the method are decisive for the final quality of the distillates (holandas). The holandas are aged in American oak casks that have previously been aged with Oloroso wine, and following the traditional Soleras and Criaderas system, entering the system through the 10th criadera and running through these to the solera, rigorously controlling the volume of bags. so that the age of the brandy remains constant.

In 1887 the owners of the Sánchez Romate wineries began to produce a different and unique brandy for private consumption. Its quality soon promoted a growing fame and the winery decided to market it under the name of Cardenal Mendoza.
